Tigerbait Tailgate Recipe Week 3

The LSU Tigers will be dining on the University of Idaho tonight. Idaho's mascot is the Vandal. But of course, Idaho is known for potatoes. And LSU is known for beating up cupcake teams. So, this week's recipe is Potato Cupcakes.

Here are the ingredients you'll need.

5 potatoes (they have to be Idaho potatoes of course)
3 eggs beaten (not quite beaten as bad as the football team will beat the Vandals)
1 tablespoon chicken fat (gotta give it up to U of Idaho, they're not chicken if they're coming in to Tiger Stadium on a Saturday night)
salt and pepper (like the Idaho coaches hair after the game)

How to make it...

Peel, boil and mash potatoes, let them cool. Add eggs, fat, salt and pepper. Fill greased muffin tins 3/4 full. bake at 350 degrees F, about 45 minutes. Cupcakes should be soft and fluffy.
