It's week 5 for the LSU Tigers, and for the second week in a row they are playing a team that are also named the Tigers. This week, it's the Towson Tigers. Now, Towson is near Baltimore and when I think of Baltimore and food... I think of stone crabs. I love crabs, but that's not going to work for our purposes today. We need a Tiger dish. Since we can't cook Tiger meat in our Tigerbait Tailgate recipe, how bout "Crying Tiger Beef"... cuz one of these Tigers will be crying when they leave Baton Rouge and it won't be LSU.

Ingredients you'll need for the steak...

  • 1/2 lb sirloin steak, (a true Tiger fan eats it raw... but let's continue)
  • 1 garlic clove sliced
  • 4 coriander sprigs (It's a Thai food thing... but there won't be any "ties" tonight)
  • 1 1/2 teaspoons fresh peppercorn
  • 1 teaspoon fish sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar (victory tastes so sweet)

Ingredients you'll need for the sauce...

  • 1 tsp Thai rice (tie Rice?  I thought we were playing Towson)
  • 3 tsp fish sauce
  • 3 tsp lemon juice
  • 1/4 tsp sweet chili paste (we're gonna paste the Towson Tigers against a wall)

How to make it...

To make the "Crying Tiger" pound down the garlic and coriander in a mortar and pestle (or pound em down in Tiger Stadium, either is fine.)  Put that in a mixing bowl with the fish sauce, soy sauce, peppercorns and sugar.  Add the steak to the bowl and rub it, rub it good with the marinade.  Leave in a cool place till kickoff.  For the chilli sauce, toast the rice over a low heat until golden brown. Grind to a fine powder using a mortar and pestle.  Combine the rice powder, fish sauce, lemon juice, chilli paste and sugar.  Grill your steak, let it stand for a few minutes then cut into strips.  Serve with the "Crying Tiger" sauce.  Goes great with some rice.
