What a great week to fry up some Gator. This week, the Tigerbait Tailgate suggests Fried Gator Po-Boys to get ready for the big game, #3 ranked LSU vs #10 ranked Florida.

Here's what you'll need...

  • 2 lbs boneless alligator tail meat, cut into cubes (whip that Gator tail)
  • 3 cups milk or 3 cups evaporated milk
  • 1 cup mustard (Muschamp mustard?)
  • 2 tablespoons of tony's creole seasoning (I like it spicy)
  • 2 cups fish fry mix
  • 2 cups pancake mix (LSU is going to pancake the FU QB)
  • cooking oil (for frying)
  • 2 cups shredded lettuce (Shredded like LSU is going to shred that Gator defense)
  • sliced tomato
  • pickles
  • Remoulade sauce
  • French rolls, split and hinged

Here's how to make it...

1.  Cut the alligator into 1” cubes and soak in milk (in the refrigerator) for 2 to 3 hours.
2.  Drain milk then season meat (in the same bowl) with Tony’s Creole Seasoning.
3.  Add the mustard to the bowl and mix well, coating meat with mustard.
4.  Mix meat with Fish Fry and coat well.
5.  Deep fry at 375 F for 5 to 6 minutes or until golden brown.
6. Put the Remoulade sauce on the bread and dress it with lettuce, tomato and pickle.
7.  Toss that Gator meat on the roll and EAT!!!
