They say everything is bigger in Texas and in this instance, they're right! Here's how to make 'Texas Twinkies' just like the ones at Hutchins BBQ in McKinney, TX.

Summer is on the way and it's time to fire up your grill or your smoker. I'm not real particular when it comes to brisket. In fact, I often CRAVE brisket... more than steak, ribs, or any other kind of meat.

How do you make Texas Twinkies?

Well, first, you need some brisket. I don't care if you smoke it, bake it, or grill it or even buy it pre-cooked, just get yourself some brisket and get ready to sit back and rub your belly in BBQ happiness. You'll also need cream cheese, jalapeños, and bacon, because bacon makes everything better! If you're looking for a step by step guide on this, I'll tell you it's not rocket science. Get your brisket done to your personal taste then, using toothpicks, put the cream cheese and jalapeños in a slice of brisket and roll it up, finishing with an outer layer of slightly undercooked pre-cooked bacon. They throw it all back on the grill one last time, then eat, and enjoy!

Now when my PA told me to cut back on the protein bars and drinks and start adding real meat/protein to my diet because it's more bio-available, I'm not sure she had this dish in mind, but we're just going to go for it. Check it out.



Is that picture not sexy?!?!? I sure think it is. If you want a ready to eat alternative, I highly recommend the ribeye rolls at Bergeron's. You can get them hot and ready or pre-assembled and ready to cook at the house. I like those quite a bit as well.
