Do you feel that? That is the false hope of a wonderful fall coming our way. Naturally, when the temperature drops in Louisiana we all start to gravitate towards those "warm meals". We have a long list of comfort meals that we can enjoy however there are a few that are only good in the boot.

I will forever remember the first time I tried gumbo. I was born and raised in California and didn't hear about it until I moved to the South. I visited New Orleans in 2017, and I was ready to try the coveted dish of Louisiana. I saw a plate of gumbo pass by my table and I asked my waitress "Is it a soup?" the waitress replied, "No, it's gumbo. Do you want to try it or not?", of course, I wanted to try it. It was then, that I was hooked.

Gumbo is considered a stew, not a soup and it is the official state cuisine of Louisiana.  Gumbo consists primarily of a strongly flavored stock (every Louisianan will tell you it is all in the roux), meat or shellfish, a thickener, and the Creole "holy trinity" which consists of celery, bell peppers, and onions.
